Fresh Fruit Salad with Jalapeno Citrus Dressing
Yield: Makes 6 servings
Ingredients

honeydew melon - seeded and cubed or scooped using a melon baller
|
|
|
| 1 |
|
large ripe papaya - peeled, seeded, cubed
|
|
|
| 1 |
pint |
fresh strawberries - stemmed, halved
|
|
|
| 8 |
ounces |
fresh pineapple chunks
|
|
|
|
|
|
Jalapeno Citrus Dressing: |
| 1/3 |
cup |
orange juice
|
|
|
| 3 |
Tablespoons |
lime juice
|
|
|
| 3 |
Tablespoons |
minced fresh cilantro
|
|
|
| 2 |
|
jalapeno peppers - seeded, minced
|
|
|
| 1 |
Tablespoon |
honey or granulated sugar
|
|
|
Directions:
Place fruit in large bowl and refrigerate. Toss with dressing just before serving.
Jalapeno Citrus Dressing:
In small bowl, combine orange juice, lime juice, cilantro jalapenos and sugar or honey; mix well. Refrigerate and toss with fruit just before serving.
Serving Idea: Toss fruit with dressing and thread fruit onto wooden skewers.
